A great pan for its capacity
The main reason I chose this model in the Kuhn Rikon line is the diameter. There are other pressure cookers of similar capacity, but they are deep and narrow, like a well. This pan has the diameter to avoid having food piled so deep, plus if you are browning pieces of meat, like a large eye of round or pieces of country fried steak before pressure cooking them, you have the surface area of a large skillet in which to do it. Having such a wide base no doubt makes this and the 5 qt. model more expensive to make. I thought about buying the 5 qt. but then figured that since a pressure cooker cannot be filled completely full, the extra 3 qt. capacity would allow a good capacity to safety ratio. The fact that it works on induction is icing on the cake; the 3,000 watt induction unit brings this cooker up to pressure in no time. They probably call this a professional model because its wider diameter makes better use of the larger surface heat sources on commercial ranges. Amazon's sale...
Great item!
It feels like a very safe pressure cooker. We have not always been there to take it off and it just releases steam like the old jiggle ones. Highly recommend this. It is very large which is what we wanted but may be too big for some.
overrated
professional ? "Mercedes" of pressure cookers ? is a litle to much. In my opinion overrated = overpriced
